Cross-Contact

Cross-Contamination

Bacteria require water to multiply, which is measured as "water activity" in foods.

FIFO (First In, First Out)

FIFO is a fundamental inventory management and stock rotation method used in commercial kitchens and grocery stores. It dictates that the oldest food items (those stored "first in") should be placed in front of newer items and used or sold "first out" before they pass their expiration or use-by dates.

Foodborne Illness

A foodborne illness, commonly called food poisoning, is a disease or infection transmitted to people through food or water they consume. Symptoms often include nausea, vomiting, stomach cramps and diarrhea.

Foodborne Illness Outbreak

An outbreak is officially declared by regulatory authorities when two or more people experience the same illness and symptoms after eating the same food from the same facility or source. Outbreaks trigger immediate investigations by local and federal health departments.

HACCP

Hazard Analysis Critical Control Point is a complex, proactive food safety management system widely used in manufacturing and large-scale food service. It focuses on actively identifying, evaluating and controlling biological, chemical and physical hazards throughout the entire food production process, rather than simply inspecting the finished product.

Pathogen

A pathogen is any specific biological agent or microorganism that causes disease or illness to its host. In the context of food safety, the most heavily monitored pathogens include Salmonella, E. coli, Listeria, Norovirus and Hepatitis A.

Physical Hazard

A physical hazard is any foreign, solid object that accidentally gets into food and has the potential to cause physical harm, choking or injury to a consumer. Common examples include broken glass, metal shavings from a can opener, wood splinters, stones, jewelry and human hair.

Ready-to-Eat (RTE) Food

RTE food is any food item that is completely ready for immediate human consumption without any further necessary preparation, washing or cooking. Examples include washed fruits, salads, deli meats, bakery items and cooked pizza. Because these foods will not be cooked again, handling them requires strict hygiene to prevent contamination.

Sanitizing

The critical step that immediately follows cleaning. It is the chemical or thermal process of reducing the number of harmful pathogens on a cleaned surface to a safe, acceptable level. In a kitchen setting, this is typically done with extremely hot water or an approved chemical sanitizing solution, such as chlorine or a quaternary ammonium compound.

TCS Food (Time/Temperature Control for Safety)

TCS foods are highly perishable items that are particularly vulnerable to pathogen growth. Because they naturally provide the perfect environment for bacteria (moisture, neutral pH and protein), they require strict time and temperature controls to prevent rapid microbial growth.
