This Food Safety Focus familiarizes foodservice workers with the common food and waterborne pathogen Hepatitis A, or HAV. Workers will learn common symptoms of HAV infection and how it spreads from infected people through food and water. Instruction on how to prevent the spread of HAV through work exclusion, hand hygiene, and vaccination is also included.
