Food Safety Focus: Clostridium Perfringens

This Food Safety Focus introduces foodservice workers to the common foodborne pathogen Clostridium perfringens, which is naturally found in humans and animals and is the third most common cause of foodborne illness in the United States. Learners will discover how this pathogen spreads from person to person and how the growth or spread of this pathogen can be prevented through proper hygiene and temperature control.
