Person In Charge Certification in Food Protection is a mandated training for the person in charge per shift of a risk level I, II, III, and IV food service operation or retail food establishment in the following instances:

  • When a new foodservice operation or a new retail food establishment is licensed after March 1, 2010 unless the individual has successfully completed an equivalent or more comprehensive certification in food protection course (Food Manager Certification). 
  • When a foodservice operation or retail food establishment has been implicated in a foodborne disease outbreak. 
  • When the licensor has documented a failure to maintain sanitary conditions as per section 3717.29 of the Revised Code for a retail food establishment or section 3717.49 of the Revised Code for a foodservice operation.

​Fully Audiovisual Learning Experience
The StateFoodSafety course content is presented using mixed media including on-screen text, video, illustrations, interactivity, and question-and-answer. The entire course is presented in full audio; however, learners may choose to read the narration in partnership with the audio, or read only and mute the narration.  The course is available in full audio in all languages, with the option of text-only learning, to facilitate the needs of those with hearing loss, vision loss, limited literacy, and learning disabilities.

  • Identify food safety risks and create policies to address them
  • Train employees to follow food safety policies
  • Take appropriate action when an employee has symptoms of foodborne illness or is diagnosed with a reportable disease
  • Follow good personal hygiene and hand care practices
  • Identify approved suppliers and methods for inspecting deliveries
  • Identify cross-contamination risks and methods for prevention
  • Implement effective cleaning and sanitizing procedures
  • Identify appropriate pest prevention measures and signs of pest infestations
  • Prevent bacterial growth in Time/Temperature Control for Safety (TCS) foods during all stages of the flow of food
  • Maintain facilities and equipment in compliance with regulations
